cushy's African Chicken



2 small bell peppers (red and yellow), slivered

1 small onion, slivered2 teaspoons lime juice

2 teaspoons minced, peeled gingerroot

1 1/4 teaspoons minced garlic (2 to 3 cloves)

1/4 teaspoon red pepper flakesSalt and ground pepper to taste

1 tablespoon canola oil

Hot cooked rice


Instructions
In mixing bowl, combine pepper, onion, lime juice, ginger, garlic, red pepper flakes, salt and pepper; set aside.
In a large nonstick skillet, over medium-high heat, heat oil.

Add frozen chicken and reduce heat to medium. Cover and cook 10 minutes.
Turn chicken and add reserved vegetable mixture.

Partially cover with lid.

Cook 10 to 15 minutes longer, until chicken is cooked through, turning occasionally.
Serve over rice.
