Spiced pork fillet with apple Greek salad



Ingredients
140g pork fillet
20g feta, diced
30g tomato, diced
20g black olives, diced
¼ cucumber, diced
1/3 green apple
Tsp coriander
Tsp cumin
Tsp nutmeg
Tsp tumeric
½ tsp paprika
Preparation

1. Cut pork into medallions and seal quickly.
2. Mix spices together and dip meat into mixture.
3. Pan fry.
4. Roast 2 slices of apple.
5. When cooked, sprinkle with teriyaki and baste.
6. Serve on a bed of cucumber, feta tomato black olives and diced green apple in white wine vinegar and extra virgin olive oil.
