Ingredients
2 fillets of salmon
2 large potato cooked
1 tbsp dill
1 tbsp flat leaf parsley
200gms sprouting broccoli cooked
breadcrumbs
1 eggflour
Preparation
1. Poach the salmon in water seasoned with salt pepper lemon juice for 5 mins.
2. When ready drain and allow to cool then flake.
3. Blanch the broccoli, drain then chop up. Use the same water to cook the potatoes.
4. Cook the potatoes in boiling water, drain and mash together just to break up slightly.
5. Mix together the salmon, potato and broccoli.
6. Add the herbs and season.
7. Mould into 3 inch cake sizes.
8. Leave to set in the fridge.
9. Dip the cakes into flour, then beaten eggs and then the breadcrumbs.
10. Fry in a shallow olive oil until golden brown

you dont have to use salmon you can use whiting, pouting, cod,
or tuna have not tried tuna yet maybe another day
